Easy Vegan Pumpkin Pie

A classic, made vegan! Delicious, yummy, cruelty - free goodness! SOO good! All you need, is a few dollars, a few minutes, and the patience to wait an hour to eat this!



Ingredients:

1 pie crust
1 16 oz. canned pumpkin pie filling
1 cup powdered sugar
5 drops vanilla
3 pinches of nutmeg
1 tablespoon cinnamon sugar mix
1/4 cup of flaxseed


In a large bowl, mix all ingredients beside pie crust together. Mix until smooth, and poor into pie crust. Cool in the fridge for 1 hour and your done and ready to enjoy your delish pie!

My Day

My day was filled with new things, all delicious, all vegan. :)


For Breakfast: I had jelly toast and coffee. For Lunch: I had vegetables with soy sauce, and a slice of homemade pumpkin pie! (Came up with the recipe ourselves!) For dinner: Pizza Hut - Their thin crust is vegan, no cheese, and oil. YUM

Winter

The weather is changing from fall to winter. I woke up to a snow covered lawn and roof tops. Every year, I marvel at the first snowfall and then HATE it when it is nearing March. Oh, how we take things for granted so often. Every year, over 15 million turkeys die at Thanksgiving alone!!! That is CRAZY!  Have you ever really "gave thanks" on Thanksgiving? I mean, why do we celerbrate by eating a slaghtered bird, saying grace, and leaving it at that? Thanksgiving is more then food, more then football it's about giving thanks. And I know, that by being vegan, turkeys will be saying "thanks" to you. Happy Thanksgiving guys!

McDonalds

The Southwest Salad at McDonalds is delicious. Without, the meat and cheese of course! :) The Chili Lime Tortilla Strips are spicy and add flavor. It comes with corn and beans and fresh vegies, its pretty good. Especially, for 4.99.

wow!

I read this the other day. "Whats the difference between a vegan and vegetarian?" Vegetarianism is a diet, veganism, is a lifestyle. Wow, this hit me hard. I thought about this, it made me feel that what I'm doing, is worth it, and I'm hoping it makes you guys feel the same way.

MMmm! YUM!

I didn't feel like a vegan at all today. For Breakfast: I had a everything bagel with "butter!" YUM!!! For Lunch:  Another Bagel with lettuce and onion. Dinner: Taco Bell! Pintos and Chips! :) Yum!

I LOVE Earth Balance Buttery Spread! It's awesome! I swear, I can't tell the difference between butter and the vegan imposter. It's SO good, and has 0 grams of cholesterol per serving! So, feel free to load it up on baked patatoes, toast, and bagels.

I am a Vegan

I am a vegan. That means I avoid 5 things, meat, milk, eggs, honey, and everything with these ingredients. When you look at the benefits, skipping out on all these things is worth it. When I went vegan, I thought I would miss 2 things BADLY, cheese and ranch dressing. I rarely, miss these things, although I just want a piece of chicken bacon artichoke pizza SO bad sometimes! But, I get over it, :) and love  being vegan. C'mon guys, try it with me, go vegan!

My Day

Breakfast: 1 serving of chocolate cereal and 1 cup of almond milk.

Lunch: My own Pea and Bean Salad


Dinner: Vegan pizza, vegan pasta, and applesauce

This is VERY exciting!

This is very exciting! Target carries E.L.F. products, which is vegan so thats great in its self.  Target has now started carrying meatless meats!!!

Pea and Bean Salad

Pea and Bean Salad


I eat this delicious salad all the time! Its healthy, delicious, and vegan!


Ingriedients:

- 1 cup frozen peas
- 1 cup beans (I have used chickpeas in the pic.)
- Vegetables (I use carrots, onions, and peppers.)
- Your favorite dressing (I use Italian.)


Chop vegetables and mix with beans. Prepare frozen peas according to packaging. Next, mix  vegetables and beans with the peas. Add your dressing, mix once more and serve. 


This is one of my absolute favorites, and you can feel good about eating a very healthy, cruelty free meal! :)

Want to indulge?

My jaw dropped when I figured out that a favorite junk food of mine is vegan! Oreo's!!! Yes, it's true Americas Fave Cookie is vegan! Oreo's + Soy/Almond milk = a yummy treat!

Dont feel bad, your saving the animals! (And being super healthy also!)

I know, I know it's hard to ask! "Does this contain dairy?" or "Is this vegan?" The other day, I asked if their pizza dough was vegan. I got "Wait, whats vegan?" "Is that like gluten free?" Sometimes, I want to SCREAM!!! I wish I didn't have asked. But, I really do encourage you to ask if that food your eating is vegan, because its worth it!

I had one of those crazy fast food on the go days, I didn't feel vegan at all!
